- 2 cups boiling water
- 2 tbsp honey or simple syrup
- 2 tbsp fresh lemon juice
- 1 cup ice cubes

1. steep
steep the butterfly pea flowers in boiling water until deep blue.
2. strain and sweeten
strain out the flowers and stir in honey while it's still warm.
3. chill
cool to room temp, then refrigerate or pour over ice.
4. the reveal
add fresh lemon juice right before drinking and watch it shift from blue to violet to pink.
